Microgreens are seedling of edible vegetables and herbs. They are harvested when the plants develop their first true leaves, which is about 1-2 weeks after planting. The greens are rich in vitamins, minerals and antioxidants. As microgreens are harvested in their seedling stage they have concentrated levels of nutrients. Plus, unlike mature vegetables, they require little to no processing during meal prep. No more removing stems or chopping!
A 2012 study by the University of Maryland tested microgreens for several vitamins and found they contained 4-40 times more nutrients than their mature vegetable counterparts on a per weight basis.

Sunflower:
These shoots make a great base for any microgreens salad. They can take your sandwich, burger, or wrap to the next level. They also make a tasty and protein-packed snack all by themselves
Pea shoots:
They are both tender and crisp with a fresh, sweet pea flavor. Pea shoots can be enjoyed raw in a myriad of ways; or try brightening up your soup or stir fry with these tasty shoots!
Radish:
These fresh, crunchy shoots can be used in place of sliced radish anywhere you would normally use radish. You can top your avacado toast with them or add it on top of your eggs.
